Homemade Schnitzel and Salad

  • Dairy Free

To crumb the schnitzel you will need:

  • Almond meal

  • 1 egg

  • Italian herbs

  • Chicken or veal 

  • Olive oil 

How to crumb:

  • Mix together some almond meal & Italian herbs in a bowl - how much you need will depend on how many pieces of schnitzel you are crumbing

  • Whisk up an egg

  • Dip your meat in the egg allowing excess to drain off

  • Coat with the almond mixture, repeat until you have used up all of your meat

  • Heat some olive oil in a pan & fry off your schnitzels until browned on both sides 

I served my schnitzel with a light salad & a sesame mustard dressing. The salad is a mixture of:

  • Spinach

  • Cucumber

  • Capsicum

  • Roasted sweet potato

Sesame Mustard Dressing:

  • 1 tbsp olive oil

  • 1 tbsp apple cider vinegar

  • 1 tbsp organic seeded mustard

  • 1 tbsp tamari or soy sauce

  • 1 tbsp sesame seeds
