Almond Butter Biccies

MAKES 10 COOKIES

  • Dairy Free

INGREDIENTS

  • 1 egg

  • 1 tsp vanilla

  • 1/4 cup coconut oil, melted & cooled

  • 1/2 cup coconut sugar

  • 1 cup almond meal

  • 1/4 cup coconut flour

  • 1 tsp baking powder

  • 1 heaped tbsp almond butter 

  • Chocolate squares

METHOD

  1. Preheat oven to 180 degrees

  2. Beat egg, add coconut oil, coconut sugar & vanilla

  3. Add almond meal, coconut flour & baking powder, mix to form a dough

  4. Fold in almond butter

  5. Use a tablespoon to scoop out balls of mixture onto a baking tray, carefully flatten out with your fingers

  6. Place 1 square of choccy into each cookie

  7. Bake in preheated oven for 12 mins
