Chia Berry Muffins

MAKES 12 MUFFINS

  • Dairy Free

INGREDIENTS

  • 1 cup buckwheat flour 

  • 1/2 cup almond meal 

  • 1/2 cup shredded coconut 

  • 1/4 cup chia seeds

  • 2 tsp baking powder 

  • 1 tsp cinnamon 

  • pinch of salt 

  • 2 eggs

  • 3/4 cup almond or coconut milk

  • 1.5 cups mixed berries

METHOD

1. Preheat oven to 180 degrees Celsius

2. Mix all dry ingredients in a bowl until combined 

3. Add the wet ingredients and continue stirring until mixture is well combined 

4. Add in the mixed berries & gently fold through the mixture 

5. Spray your muffin tray with coconut oil and spoon in muffin mixture

6. Bake in a preheated oven for 20 mins 

7. Let cool, dust with coconut flour for decoration & enjoy!
