Hot Cross Bun Cookies

MAKES 9 COOKIES

INGREDIENTS

  • 1 egg

  • 1 tsp cinnamon

  • 1/2 tsp nutmeg

  • 1/4 cup coconut oil, melted & cooled

  • 1/2 cup coconut sugar

  • 1 cup almond meal

  • 1/4 cup coconut flour

  • 1 tsp baking powder

  • 1/2 cup sultanas

  • Coconut flour & water to make the crosses

METHOD

  1. Preheat oven to 180 degrees

  2. Beat the egg, add coconut oil, coconut sugar, cinnamon & nutmeg in a mixing bowl

  3. Add in the almond meal, coconut flour & baking powder, mixing to form a dough

  4. Gently fold in the sultanas

  5. Use a tablespoon to scoop out balls of mixture onto a baking tray, carefully flatten out with your fingers

  6. In a small bowl, mix together some coconut flour and water to create a paste. Put the paste into a zip lock bag and snip the corner. Squeeze out paste to make crosses on each cookie

  7. Bake cookies in preheated oven for 12 mins
